About L-Tryptophan
The largest proteinogenic amino acid by mass, with an indole side chain that fluoresces and is used to study protein folding. It is the biosynthetic precursor of serotonin, melatonin, and the vitamin niacin, and its scarcity in maize protein causes pellagra where diets are maize-dependent.
