About L-Glutamic acid
The principal excitatory neurotransmitter in the mammalian brain and one of the three proteinogenic amino acids synthesised from a citric-acid-cycle intermediate. Its sodium salt is the food additive MSG, and its decarboxylation under anaerobic conditions produces GABA.
