About Ascorbic acid (vitamin C)
A water-soluble antioxidant and the cofactor for prolyl hydroxylase, the enzyme that cross-links collagen. Its absence causes scurvy, and its reversible oxidation to dehydroascorbic acid makes it a convenient redox indicator.
